Salmon tartare with chili mango
Fruity salmon tartare with sweet mango and subtle spiciness is a perfect summer dish that is also great for guests and rich in protein.
Ingredients
- 300 g very fresh salmon fillets without skin (alternative: smoked salmon)
1 tablespoon olive oil - 1 small mango
- 1 avocado
1 chili pepper
Chopped cilantro
3 tablespoons sesame oil
pinch of salt
pepper - 2 EL BLACK SESAME.
- Orange fillet optional for garnish
- Bread, slices or puff pastry.
Instruction
Wash and finely dice the salmon. Mix with rubbing, juice of limes, oil, salt.
Leave to infuse well in the refrigerator.
In the meantime, prepare the remaining ingredients.
Remove avocado and mango from peel, remove seeds and cut into cubes.
Wash chili, cut in half lengthwise, remove seeds, chop finely.
Wash, drain and chop the cilantro.
Mix everything well in a bowl and finely grate the zest of limes with a grater, squeeze the juice of the limes. Sesame oil, wasabi paste, salt and pepper to taste.
Arrange on plates in layers, it is best to use a serving ring for this purpose.
Place serving ring on a plate, spread avocado-mango cubes evenly with the help of a teaspoon, smooth and press firmly. Spread salmon tartar on top and press down lightly as well.
Carefully lift off the ring.
Salmon tartare, garnish with wasabi mayo, toasted black sesame seeds and cress.
