Sellou, also known as sfouf, is a traditional Moroccan speciality with an unmistakable taste. The mixture of roasted flour (wholemeal flour), almonds and sesame seeds forms the basis of this nutritious classic. Refined with fine spices and sometimes other nuts, sellou is a firm favourite on every Moroccan table, especially during the holy month of Ramadan.
